Vinification and aging
SOIL TYPE: Hilly terrain, clayey-limestone, deep, rich in marine fossils and skeleton with presence of sandy and marly schists. East exposure. A Mediterranean climate, with marine winds and protected by Montalbano and good temperature variations during grape maturation.
FERMENTATION: Grapes harvested in crates and destemming-crushing. Vinification with the presence of skins at controlled temperature (14-18°C), subsequent filling of the tank and maceration for about 120 days.
AGING: in steel with batonnage on fine lees.
Organoleptic characteristics
The color is straw yellow tending towards orange. On the nose, it expresses sensations of yellow flowers, peach, and banana, while on the palate, it is fresh and lively, dynamic, with good structure and acidity, a citrusy and long finish.
