Vinification and aging
The grapes harvested in August are destemmed and gently pressed. The obtained must is cold settled for about 10 hours and then transferred to stainless steel tanks where fermentation takes place for about 15 days at a controlled temperature of 14-16°C. Once fermentation is complete, the wine undergoes aging on fine lees with frequent batonnage for about 5 months until bottling.
Organoleptic characteristics
With a very intense and complex yellow-greenish color, it presents a fresh and decisive taste with fruity aromas and a pleasant taste-olfactory persistence.
